Aloo Kulcha is a delicious Indian bread stuffed with spiced mashed potatoes. Here's a recipe for making Aloo Kulcha at home:
Ingredients for Kulcha Dough:
- 2 cups all-purpose flour (maida)
- 1/2 tsp salt
- 1 tsp sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp oil
- 1/2 cup yogurt
- Water as needed
Ingredients for Aloo Stuffing:
- 2-3 medium-sized potatoes
- 1 green chili, finely chopped
- 1/2 inch ginger, grated
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp garam masala powder
- Salt to taste
- 1 tbsp oil
- Fresh coriander leaves, chopped
Instructions:
1. To make the kulcha dough, combine the all-purpose flour, salt, sugar, baking powder, and baking soda in a large mixing bowl. Mix well.
2. Add 2 tbsp of oil and yogurt to the flour mixture. Mix well using your hands.
3. Slowly add water, a little at a time, and knead until you get a soft and smooth dough. Cover the dough and let it rest for 2-3 hours.
4. To make the aloo stuffing, boil the potatoes until they are cooked through. Peel and mash them in a bowl using a fork or a potato masher.
5. Heat oil in a pan and add cumin seeds. Once they start to splutter, add chopped green chili and grated ginger. Sauté for a minute.
6. Add coriander powder, garam masala powder, and salt to the pan. Mix well and cook for another minute.
7. Add the mashed potatoes to the pan and mix everything together. Cook the mixture for 2-3 minutes, stirring occasionally. Turn off the heat and add chopped coriander leaves. Mix well and let it cool.
8. Divide the kulcha dough into equal-sized balls. Roll out each ball into a circle, dusting flour as needed.
9. Place a spoonful of the aloo stuffing in the center of each rolled-out dough circle. Gather the edges of the dough to seal the stuffing inside. Press the stuffed ball down gently and roll out again into a slightly thick circle.
10. Heat a tawa or a griddle on medium heat. Place the stuffed kulcha on the tawa and cook for 1-2 minutes on each side, or until golden brown and cooked through. Apply a little bit of oil or butter to the surface of the kulcha while cooking to make it crispy.
11. Serve hot with some butter or chutney on top.
