Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable oil

- 2 medium-sized potatoes, boiled and mashed
- 1/2 cup frozen peas
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon fennel seeds
- 1 teaspoon amchur powder (dried mango powder)
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder
- Salt, to taste
- Oil, for frying
Instructions:
1. In a large mixing bowl, add the flour, salt, and vegetable oil. Mix well until the flour resembles bread crumbs. Gradually add the water and knead until a smooth and elastic dough is formed. Cover with a damp cloth and set aside for 30 minutes.
2. In the meantime, prepare the filling. Heat some oil in a pan and add the cumin, coriander, and fennel seeds. Let them splutter for a few seconds.
3. Add the mashed potatoes and frozen peas to the pan. Mix well and add the amchur powder, garam masala, red chili powder, and salt. Cook for a few minutes until the filling is well combined and the peas are tender. Set aside to cool.
4. After 30 minutes, knead the dough again and divide it into small balls. Roll each ball into a thin circle of around 6-7 inches diameter.
5. Cut the circle in half to form two semi-circles. Take one semi-circle and fold it to form a cone, sealing the edges with water. Fill the cone with around 2 tablespoons of the filling and seal the top edge with water.
6. Repeat this process for the remaining dough and filling. Set aside the samosas for around 10 minutes to let them dry out slightly.
7. Heat some oil in a deep frying pan. Once the oil is hot, add the samosas to the pan and fry on medium heat until they turn golden brown and crispy. Flip the samosas occasionally to ensure they are evenly cooked.
8. Remove the samosas from the pan and place them on a paper towel to remove excess oil.
9. Serve hot with tamarind or mint chutney.
