Ingredients for sarson ka saag:
- 500g mustard greens (sarson)
- 250g spinach leaves (palak)
- 100g bathua leaves (optional)
- 2-3 green chilies, finely chopped
- 1-inch piece of ginger, grated
- 3-4 garlic cloves, minced
- 1 medium-sized onion, chopped
- 2 medium-sized tomatoes, chopped
- 1 tsp cumin seeds
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp ghee or oil
Ingredients for makki ki roti:
- 2 cups maize flour (makki ka atta)
- Water as needed
- Salt to taste
- Ghee or butter for frying
Instructions for sarson ka saag:
1. Clean the mustard greens, spinach, and bathua leaves thoroughly in water.
2. Chop the greens and boil them in a pressure cooker or a pot with 2 cups of water, chopped onions, chopped tomatoes, grated ginger, and minced garlic.
3. Cook the mixture for about 4-5 whistles or 30 minutes on a low flame. Once the steam is released, open the cooker and mash the greens with a wooden spoon.
4. Heat ghee in a pan and add cumin seeds, green chilies, and mashed greens. Mix well.
5. Add red chili powder, coriander powder, turmeric powder, and salt. Mix well and cook for another 10-15 minutes.
6. Serve hot with makki ki roti and a dollop of butter.

1. In a mixing bowl, add maize flour, salt, and water as needed to make a soft and pliable dough.
2. Divide the dough into equal-sized balls and roll them into a circular shape using a rolling pin or with your hands.
3. Heat a tawa or griddle on medium heat and place the rolled roti on it.
4. Cook the roti on both sides until golden brown, using ghee or butter for frying.
5. Serve hot with sarson ka saag and a dollop of butter.
